Hey everyone! What’s up? And don’t say the sky. Please.
I’m enjoying summer, so that’s what’s up with me! It’s that time of year after all. In case those of you are confused why I’m mentioning this and nothing medical well…I’m not going to talk about medical stuff in this post like I mentioned in my last post. The whole point of this blog is to help people realize they are not alone in their medical journey, but it’s also to help people realize that yeah you have chronic pain, but you can still do fun things and enjoy life!
Anyway! Not to sound like a typical California girl, but I will admit that I love summer and plan to spend as much at the beach as possible, of course, with lots of sunscreen. I won’t be tanning, but I sure as heck won’t be burning. One of my favorite things to do during the summer, besides going to the beach, is to make fun drinks and snacks.
Here are some recipes for some of my favorite summer snacks and drinks! Most of which, are really easy to do.
Watermelon Slushy –
What you’ll need: 4 cups of seedless cubed watermelon, 10 ice cubes, 1/3 cup of fresh lime juice, 1/8 tsp. of salt, and 1/4 cup of white sugar (optional)
Directions: blend all ingredients together and enjoy!
Monkey Tails –
What you’ll need: 10 ice pop sticks (you can buy them from your local craft store or grocery store), 5 ripe bananas (not ripe will work, it just tastes better when they are really ripe), one ounce package of chocolate chips, one table spoon of butter
Directions: Insert 1 pop stick into the cut end of each banana. Place the bananas on a wax paper covered baking sheet and freeze until the bananas are frozen, about 2 hours.
Melt the chocolate and butter in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each melting, for 1 to 3 minutes (depending on your microwave).
Dip the frozen bananas in the melted chocolate, spooning the chocolate over the banana to cover it completely. Roll in coconut if desired. Place the dipped bananas on the wax paper-covered baking sheet, and freeze until the chocolate is firm. Enjoy!
Nutella Shake –
What you’ll need: Nutella, one banana, chocolate or vanilla ice cream
Directions: add three table spoons of Nutella to your blender, take your banana and break it up into smaller pieces. Place in blender too. Add in one scoop of vanilla or chocolate ice cream. Then blend and enjoy!
